Ah these... There was a "secret" sushi place like this near Irvine in OC (maybe still exists?). We'd call it informally "sushi nazi". The kind of place with only a few seats and as soon as it'd be full, there'd be a sign "we're closed".
Chef tolerated me because I asked for "kujira" (whale: which obviously they won't serve in California but in Japan there are places where the "whales only hunted for scientific experiment we promise" actually end up as sushi...).
Now seriously: unless you're in japan, TFA is all bullshit. The only one that's not all bullshit is that, if you're in Japan, you eat the nigiri sushi with your hands.
Enjoy your sushis however you want as long as you don't disrespect other customers. Meanwhile chefs living thanks to my money can thank me for being in their restaurant.

I love eating sushi with my hands, because it's way easier to dip just the fish in soy sauce that way. Sometimes I wonder if it's a faux pas.
